Level 2 Diploma in Food & Drink Operations

This qualification includes  mandatory knowledge and competency units in areas including the importance of standard operating
procedures, food safety and HACCP, product quality, health, safety and environmental standards, product changeovers and task
handovers, continuous improvement and measuring performance of processes.
Apprentices and their employers also have the ability to select one unit from a range of optional competency units, specific to their job role. This choice will ensure occupational competency for an operative skill.

  • Principles of the food and drink supply chain
  • Principles of food safety and HACCP in manufacturing
  • Optimise product and ingredient quality in food and drink operations
  • Maintain health, safety and environmental standards in food and drink operations
  • Measure process performance and contribute to continuous improvement in food and drink operations

Once this Level 2 Diploma in Food & Drink Operations is completed subject to External Quality Assurance a certificate is issued and used as evidence for the apprenticeship for Food Process Worker.

Part of the Food Process Worker Apprenticeship:

This stand alone certificated qualification is required as part of the apprenticeship. This is completed by completing the different units to meet the assessment criteria. Collating different types of evidence including completing knowledge questions, researching different subjects to enable the completion of the questions. Completion of observations in the workplace demonstrating skills, knowledge and competency. Collating evidence during the observations is important. Obtaining witness testimonies and witness statements are also acceptable. This helps to build and collate a portfolio of robust evidence to demonstrate competency. The portfolio is always subject to internal and external verification. The apprentice is guided by the appointed apprenticeship coach.

The apprentice should prepare for the end point assessment (EPA) whilst working towards this qualification.
