Level 3 Award in HACCP for Catering
This qualification is primarily aimed at supervisors/managers working within the catering, but will also be of benefit to those working in retail. This Level 3 qualification covers the importance of Hazard Analysis and Critical Control Point (HACCP)-based food safety management procedures, the management and implementation of HACCP-based procedures, development of the procedures and the evaluation of the procedures.
Provides business owners, managers and supervisors of small, medium-sized and large catering operations with a thorough understanding of how HACCP-based procedures are applied in catering.
EU legislation requires food businesses have a documented food safety management system in place, based on HACCP principles.
HACCP has, however, been particularly difficult to establish in catering businesses, because of the sheer number and variety of processes involved in preparing and serving food. This practical, accessible and user-friendly qualification has been created to help caterers comply with EU legislation and provides a thorough understanding of how HACCP-based procedures can be applied in a catering context. It also provides the flexibility to suit different types of businesses.

The course is delivered over 1 full day.

To successfully complete the course there are two assessment alternatives:
1. An exam multiple choice exam paper.
2. As an alternative to an exam the requirement is for each attendee to complete and assignment based on food area attendees are familar with. An agreed hand in date with support from the course tutor on an individual basis as required.
